CHEDDAR CLOUD EGG 🧀☁️🥚. No, we’re not back in 2017 again, but I’m bringing the cloud egg into 2020 with this tastier version using grated cheddar mixed with the egg white (because cheese makes everything more delicious) 😍. I served the cloud egg with smoked salmon and avocado but this would also be delicious on toast or a toasted giant crumpet👌.

Recipe (serves 1):
☁️ Crack and separate a large egg, leaving the yolk to one side.
☁️ Whisk the egg white until it forms stiff peaks (as if you were making a meringue). Tip: using an electric whisk makes this much faster, unless you fancy an arm workout 😉💪.
☁️ Grate 30g cheddar (or other hard cheese of your choice) using the smaller side of the cheese grater. Gently fold the cheese into the egg white, being careful not to knock out too much of the air that you whisked in. Add any other herbs/seasonings of your choice (chopped chives go well with the cheese).
☁️ Spoon the egg white mixture into a round on a lined baking tray. Create a well in the centre for the yolk (but don’t add it yet).
☁️ Bake at 180C for 5 minutes, then add the yolk to the centre. Pop back in the oven and cook for another 2-3 minutes.
☁️ Serve and enjoy. The egg white should be fluffy and crispy on the outside with a perfectly runny yolk for dipping 👌.
